And when she arrived here, she discovered something that stayed with her: Spanish wines, and Catalan wines in particular, have a character all their own. "Very chulos," she says, unable to find a better word.

What makes a wine "natural"?
A natural wine is made with as little intervention as possible : no chemical additives, no artificial corrections, native yeasts and, often, grapes grown organically or biodynamically.
